Yes you can create as many tags as possible. This will help in increasing your indexed pages quantity. But i don't find any such benefit in it!

I think creating tag is not a big issue you can create tags as many as you wanted in wordpress

Yes you can use those tags as well even if they are less related to your website or blog. Still they don't need to be too much far away to what your website really means!
